4 fresh baby bocconcini
4 fresh cherry tomatoes
6 basil leaves
2 wooden 6 inch skewers
Nonna Pia’s Balsamic Glaze
THIS IS HOW WE DO IT/METHOD
1. On skewer, alternate tomato, basil, bocconcini twice per skewer.
2. At service time, place two skewers on plate.
3. Drizzle with Nonna Pia’s Balsamic Glaze.
Chef Norm’s Notes:
A PROTEIN TWIST! To give this appetizer a bit more body, Chef Norm likes to cook chicken breast and cut into cubes and intersperse them on the skewers with the mozarella, tomato and basil. Then place the skewers on a plate and coat them with olive oil and sprinkle with a blend of thyme, basil, salt and pepper. Once coated, preheat a pan on medium high heat with a little olive oil and pan sear or grill on BBQ for approximately 45 seconds per side until tomatoes are slightly soft and mozzarella is slightly melted. Plate and drizzle with your favourite Nonna Pia’s Balsamic Glaze.
